Kitchari is Ayurveda's most complete meal — a simple, nourishing combination of split mung dal and basmati rice that is easy to digest, deeply satisfying, and used for everything from everyday eating to cleansing. The mung dal is medicine in itself: cooling, cleansing, and one of the only proteins considered tridoshic in Ayurveda. The spices take it further.
This blend is formulated specifically to pacify Kapha — the dosha of earth, water, and structure.
