Kitchari is Ayurveda's most complete meal — a simple, nourishing combination of split mung dal and basmati rice that is easy to digest, deeply satisfying, and used for everything from everyday digestive support to cleansing. The mung dal is medicine in itself: cooling, cleansing, and one of the only proteins considered tridoshic in Ayurveda. The spices take it further.

This blend is formulated specifically to pacify Vata — the dosha of movement, air, and space. Vata, when out of balance, shows up as anxiety, bloating, constipation, dry skin, restlessness, and a body that feels ungrounded and scattered. Together, the mung dal and these spices work to bring warmth, stability, and calm back to the system.

Ingredients::

Fennel calms and cools the digestive tract, easing bloating and gas — the classic signs of Vata digestive distress.
Coriander cools and soothes the digestive tract as well, clearing heat and inflammation from the gut without adding any dryness — the last thing Vata needs.
Cumin kindles agni (digestive fire) gently and steadily, without overheating.

Black Pepper activates the absorption of every other spice in this blend, making the whole greater than the sum of its parts.
